Ingredients For Gudi Padwa Special Thali Recipe

  1. 1.  Wash and rinse the tur dal and millets. Add them to pressure cooker pans. Add 2 cups of water to tur dal, 1/2 cup of water to millets. In the dal add 1/2 Tsp turmeric powder, 1/2 tsp hing powder. Along with potatoes also add 1 raw mango to pressure cook. Pressure cook all together at medium to low flame for 3-4 whistles. 
  2. 2. Add 1/2 cup and 1 cup of chana dal to separate bowls. Wash thoroughly and soak in water for 2-3 hours.

Ingredients for Millet rice: 

  1. Millet (Barnyard or Foxtail or little) - 1/2 cup.
  2. Water - 1/2 cup.

Ingredients for Puran: 

  1. Channa Dal - 1 cup.
  2. Jaggery - grated - 3/4 cup
  3. Sugar - 1/4 cup.
  4. Cardamom powder - 1/2 Tsp
  5. Nutmeg powder - 1/4 Tsp
  6. Water- 1 cup.

How to Make Gudi Padwa Special Thali Recipe: Step-by-Step Instructions

  1. Add the 1 cup soaked chana dal to a pressure cooker. Add water. Pressure cook on medium to low flame for 3-4 whistles.
  2. Heat a pan or Kadai on medium heat. Add the cooked chana dal. Smash it using a spatula. Add jaggery and sugar. Mix well.
  3. Cook the mixture on low to medium heat till it starts leaving the sides . Keep stirring continuously to ensure the jaggery does not stick to pot and burn. Be careful while stirring as jaggery forms bubbles and the hot jaggery bubbles might spill on your hands. Sign of puran being cooked is it starts getting dry at the edges of the pot.
  4. Once the puran is cooked add cardamom powder , nutmeg powder and mix well.
  5. I shaped the puran into modak shape using a mold for serving.

Ingredients for Aloo-Mater sabji: 

  1. Small potatoes - 6-7 
  2. Green Peas / Matar -  1 cup
  3. Garlic - 3-4 cloves
  4. Ginger - 1 inch
  5. Green chilies - 2-3
  6. Vegetable oil - 1 TBSP
  7. Turmeric powder  - 1 Tsp
  8. Red chili powder - 1 Tsp
  9. Water - 1/2 cup
  10. Lemon juice - 1 TBSP
  11. Finely chopped cilantro for garnishing.
  12. Salt to taste

Method - 

  1. In a mixer grinder jar , add garlic , ginger , green chilies and grind into a coarse paste without adding any water to it.
  2. Heat a heavy bottom pan on kadai on medium heat. Add vegetable oil . Once hot , add the grinded masala. Sauté for a minute. Add turmeric powder and give a quick mix.
  3. Add green matar and mix well. Add red chili powder and salt to taste. Mix well. Add water. Cover the lid and cook for 5-7 minutes.
  4. Add boiled potatoes (cut into cubes or halves) . Mix well and cover the lid. Cook again for another 8-10 minutes.
  5. Add Lemon juice and garnish with finely chopped cilantro. 

Ingredients for Kairi (raw mango) dal: 

  1. Tur Dal - 1/2 cup.
  2. Raw mango - grated  - 1/2 cup
  3. Jaggery - 1 TBSP
  4. Turmeric powder - 1/2 Tsp
  5. Hing powder - 1 TSP
  6. Vegetable oil - 1 TBSP
  7. Mustard seeds - 1 Tsp
  8. Cumin seeds - 1 Tsp
  9. Garlic cloved - 2-3
  10. Curry leaves - 8-10
  11. Water as needed. 
  12. Freshly chopped cilantro for garnishing.
  13. Salt to taste.

Method - 

  1. Heat a pot on medium heat.  Add vegetable oil. Once hot, add mustard seeds , cumin seeds , 1/2 Tsp hing powder. Add crushed garlic cloves and curry leaves. Saute for a minute till garlic turns golden.
  2. Add cooked tur dal and mix well. Add water to adjust consistency.
  3. Add grated raw mango, salt to taste, jaggery and mix well.  You can adjust the jaggery as per the sourness of the raw mango.  Bring to a nice boil for 4-5 minutes. Garnish with freshly chopped cilantro.

Ingredients for Ambe dal: 

  1. Channa Dal - 1/2 cup
  2. Raw Mango - Grated - 1/2 Cup.
  3. Green chilies - 2-3 
  4. Vegetable oil - 1 TBSP
  5. Mustard seeds - 1 Tsp
  6. Hing powder - 1/4 Tsp
  7. Turmeric powder- 1 Tsp
  8. Curry leaves - 8-10
  9. Salt to taste.

Method - 

  1. 1. In a mixer grinder jar ,add 1/2 cup chana dal soaked for 3-4 hours, green chilies . Grind into a coarse paste without adding additional water.
  2. Remove the grinded dal in a bowl , add 1/2 cup grated raw mango , salt to taste. Mix well. 
  3. For tadka - heat vegetable oil in a tadka pan , add mustard seeds, once they crackle , add hing powder, turmeric powder and curry leaves. 
  4. Pour the hot tadka on dal mixture and mix well. Garnish with finely chopped cilantro.

Ingredients for Cucumber mint raita: 

  1. Fresh mint leaves - 10-12.
  2. Cucumber - grated - 3-4 
  3. Coconut milk - 1/2 cup
  4. Salt to taste.

Method - 

  1. In a mixer grinder jar , add mint leaves , 2 TBSP coconut milk or water as needed . Grind into a fine paste.
  2. Take grated cucumber in a bowl. Add grinded mint paste , salt to taste and mix well.

Ingredients for Jowar- Nachani roti - 

  1. Jowar flour - 1/2 cup.
  2. Nachani flour - 1/2 cup.
  3. Water - 1 cup
  4. Salt - 1/2 Tsp

Method - 

  1. Bring water to boil. In a bowl mix the jowar , nachani flour and salt . Add boiling hot water and give a quick mix. Cover and let it rest for 10-15 minutes.
  2. Knead the dough for 5-10 minutes to get a soft dough. 
  3. Take a lemon size dough ball, roll it into a roti. Use dry jowar flour to roll. Heat a tava on medium heat. Roast the roti from both sides. Optionally add oil while roasting the roti.
