Bread Rasmalai Cake Ingredients:
- 6 slices Gluten-Free Bread of your choice
- 4 cups Non-Dairy Oats Milk
- ½ cup Sugar
- 1 TBSP Corn Starch
- 1 TBSP Melon Seeds
- 1 Tsp Cardamom powder
- Kesar/Saffron
- Non-Dairy Whipping Cream (Optional)
Method:
- To prepare Rabdi: Heat a pan on medium flame.
- Bring the Oats milk to a boil.
- Set aside 2-3 tablespoons of milk in a bowl, add kesar strands, and let it soak.
- Lower the flame and simmer the milk for 5 minutes. Stir frequently to prevent sticking. Add sugar, cardamom powder, and the soaked kesar.
- Create a corn slurry by mixing cornstarch and cold oat milk in a bowl, then add it to the Rabdi. Stir continuously to avoid lumps.
- Cook on low flame for another 5-7 minutes. Allow it to cool completely.
Assembling the Cake:
- In a setting dish, layer the Rabdi.
- Trim the edges of the bread slices. Place the first layer of bread.
- Spread a layer of optional whipped cream and melon seeds over the bread.
- Add the second layer of bread and gently press it down.
- Pour a generous amount of Rabdi on top. Garnish with melon seeds and rose petals if desired.
- Save some Rabdi to drizzle on top before serving.
- Cover and refrigerate to set.
