Ingredients For Vegan Spicy Cauliflower Tacos Recipe
- Cauliflower flowerets - 1 cup
- Corn flour tacos
- Olive Oil - 2 TBSP
- Taco seasoning - 2 TBSP
- Salt to Taste
- Avocado - 1
- Cilantro - 1/4 cup.
- 1/2 Lemon juice
- Pepper powder - 1 Tsp
- Water - 1/4 cup
- Cherry Tomatoes - cut into halves - 1 cup
- Onion - finely chopped - 1/3 cup
- Jalapeno pepper - 1/2
- Cilantro - 1/4 cup
Method For Vegan Spicy Cauliflower Tacos
- Preheat oven at 400 Fahrenheit. In a mixing bowl, add cauliflower flowerets. Cut the cauliflower bite size not too big or not too small like sabzi. Olive oil, taco seasoning. Mix well. Add salt as needed. Be careful as Taco seasoning usually has salt. Make sure all the flowerets are nicely covered with masala.
- Take a baking pan and line it with parchment paper. Spread the cauliflower on the pan and spread evenly. Space the flowerets nicely so they have room to bake. Bake for 25 minutes at 400 deg Fahrenheit.
- Avocado Sauce - In a small food processor jar or small grinder - add 1 avocado cut roughly, cilantro, 1/2 lemon juice, 1 Tsp pepper powder, salt to taste, water and grind into a paste.
- Tomato Salsa - In a bowl add cherry tomatoes, onion, finely chopped cilantro, finely chopped Jalapeno, salt to taste, and mix well.
- I roasted tacos on a pan. Never heat tacos in a microwave. Spread a dollop of taco sauce, add the roasted cauliflower, generous amount of tomato salsa. Squeeze lemon juice if you like.
Tip - 1. You can replace taco seasoning with a mixture of cumin powder, red chili powder and barbecue masala.
