  • 1 cup Cauliflower florets
  • ½ cup Carrots, cut into cubes
  • ½ cup French beans, cut into 1-inch pieces
  • ½ cup Green Peas
  • ½ cup diced Green Capsicum
  • ½ cup diced Onion

Masala for veg Kolhapuri

 

  • 2 TBSP Coriander Seeds
  • 1 TBSP Cumin seeds
  • 2 Bay leaves
  • ½ inch Cinnamon stick
  • 1 Star Anise
  • 3-4 Black pepper corns
  • 3-4 Cloves/Lavang
  • 4 Dry Red chilies
  • 1 TBSP Poppy seeds
  • 2 TBSP Dry coconut
  • 1 TBSP Oil

Gravy for Veg Kolhapuri Sabji

 

  • ½ cup finely chopped Onion
  • ½ cup finely chopped Onion1 TBSP Ginger-Garlic paste
  • 2 Tomato pureed
  • 1 Tsp Turmeric powder
  • 1 Tsp Red chili powder
  • Salt to Taste
  • 1 TBSP Oil
Method

Masala

Heat oil in a pan on medium flame. Roast all dry masalas including coconut till the coconut turns brown. Cool and dry grind into a fine powder.

Vegetables

In a pan, heat 1 tsp oil on medium flame. Sauté cauliflower and carrots for 2-3 minutes. Add the rest of the vegetables, sauté for another 3-4 minutes. Remove and keep aside.
