Ingredients For Vegan Tomato Basil Pasta
- Noodles – 1 pack – You can use Gluten Free Noodles for gluten free option
- Cherry Tomatoes - 15 - cut in halves
- Garlic - 5-6 cloves - finely chopped
- Basil leaves - 8-10
- Olive Oil - 2 Tsp
- Water – 8 cups
- Salt to taste.
Method For Preparing Tomato Basil Pasta Recipe
- To Cook noodles – add water , 1 Tsp salt and 1 Tsp oil to a pot. Let the water come to a boil. Add noodles and mix well. Let the noodles cook till they are just cooked or have a bite to them . Strain the excess water and wash the noodles with cold water . Save the pasta water and noodles separately for latter use
- Heat a wok on medium heat . Once hot, add 1 Tsp olive oil , finely chopped . Saute for 2 minutes. Add cherry tomatoes , salt to taste. Remember you have added salt in noodles too. Saute for 5-6 minutes till the tomatoes turn mushy.
- Add ½ cup pasta water. Mix well. Let it simmer for a minute. Add cooked pasta and mix well. Add fresh basil leaves and serve hot.
Tips –
- Do not over cook the noodles to get a nice bite while eating .
- As we are not adding any cheese , Adding the pasta Water in this recipe gives it a nice creamy texture.
