Ingredients For Vegan Christmas Cake
- All purpose flour - 2 cups
- Applesauce - 1 cup
- Brown Sugar - 3/4 cup
- Sugar - 3/4 cup
- Vegetable oil - 1/2 cup
- Hot water - 1/2 cup + 1 TBSP
- Baking powder - 2 Tsp
- Baking Soda - 1 Tsp
- Vanilla essence - 1 Tsp
- Nutmeg powder - 1/2 Tsp
- Cinnamon powder - 1/2 Tsp
- Pitted Dates - chopped - 1/4 cup
- Dry apricots - chopped - 1/4 cup
- Dry cranberries - 1/4 cup
- Golden Raisins - 1/4 cup
- Tutti Frutti - 1/4 cup
- Pumpkin seeds - 1/4 cup
- Apple juice / grape juice / orange juice - 1 cup
Method -
- To soak the dry fruits - in a bowl add chopped pitted dates , chopped apricots , cranberries , raisins and tutti frutti . Add 1 cup of either apple , grape or orange juice . Mix well and make sure all the dry fruits are well soaked in juice. Close with an airtight lid and keep for at least 8 hours.
- Add all purpose flour , baking powder and baking soda . Sieve and keep aside for later use.
- In a mixing bowl , add 1/2 cup hot water , brown sugar and white sugar. Whisk till the sugar dissolves. Add apple juice and vegetable oil and give a quick mix.
- Add the all purpose flour mixture and whisk for another minute . Make sure there are no lumps . Add vanilla essence , nutmeg powder and cinnamon powder and give a quick mix. Make sure you do not over beat the batter .
- Add the soaked dry fruits , you can add cup pumpkin seeds to give a little crunch. Alternatively you can add chopped almonds , cashew nuts , walnuts as per your choice . Give a quick mix. Add 1 TBSP hot water and mix again. This will make the cake soft and moist.
- Grease a 9 inch cake pan or a bundt cake pan with oil and dust it with all purpose flour. Remove the excess flour from the cake pan . Pour the cake batter in the pan.
- Preheat the oven at 350 deg fahrenheit . Bake the cake for 15 minutes , then lower the temperature to 300 deg fahrenheit and bake for another 45-50 minutes or till a skewer inserted comes out clean.
- Remove the cake from the pan and allow it to cool down completely. Dust it with icing sugar .
