White Vatana, also known as Ragda Usal, is a beloved Indian dish that showcases the humble yet flavorful white peas, soaked to perfection and cooked in a medley of aromatic spices. Ingredients For Ragda Usal

  1. White Vatana - 1 cup - soaked overnight
  2. Onion finely chopped - 1
  3. Tomato - finely chopped - 1
  4. Vegetable oil - 1 TBSP
  5. Mustard seeds - 1 TSP
  6. Cumin seeds - 1 TSP
  7. Hing powder - 1/4 Tsp
  8. Turmeric powder - 1 Tsp
  9. Red Chili powder - 1 Tsp
  10. Goda Masala / Garam Masala - 1 TBSP
  11. Salt to taste.
  12. Cilantro - finely chopped for serving

Method

  1. Soak the vatana overnight .
  2. Heat a Pan on medium flame. Once hot add oil.
  3. Once the oil is hot add mustard seeds. Once they splutter , add the cumin seeds and hing powder and finely chopped cilantro.
  4. Add Onions and saute till they turn translucent.
  5. Add tomatoes and saute till they turn mushy.
  6. Add turmeric powder , chilli powder, goda masala , salt to taste. Mix well and saute for another 2-3 minutes.
  7. Add soaked vatana. Mix well.
  8. Add warm water to adjust consistency. Cover and let it cook till vatana gets cook.
  9. Garnish with cilantro and serve hot with rice or roti.
