  • Spinach - finely chopped - 1/2 cup
  • Carrots - finely chopped - 1/2 cup
  • Tomato puree - 1/2 cup
  • Onion - finely chopped - 1/2 cup
  • Ginger - garlic - finely chopped - 1 Tsp
  • Vegetable oil - 1 Tsp
  • Fresh basil - finely chopped - 1TBSP
  • Oregano- 1 Tsp
  • Thyme - 1 Tsp
  • Salt to taste.
  • Water - 2 cups

How to Make gluten-free 10 vegetable soup recipe Step-by-Step Instructions

  1. In a pot add vegetable oil and finely chopped ginger and garlic. Give a quick stir and add onions. Saute for just about a minute.
  2. Add all the other vegetables , salt to taste and water. Mix well. Cover and cook on medium flame for 10-15 minutes. Add additional water if required to maintain the soup consistency.
  3. Add fresh basil , Thyme and oregano and mix well. With the help of a hand blender , grind the mixture into a coarse soup. This gives the soup a nice bite like structure .
  4. Serve hot with a side of garlic bread or bread stick.
