Ingredients For Vegan Whole Wheat Flax Seeds Muffin
- Whole wheat flour - 1 and 1/2 cup
- Flax seeds powder - 3 TBSP
- Sugar - 1 and 1/2 cup
- Baking powder - 1TSP
- Baking Soda - 1 TSP
- Vegan milk - 1 cup
- Vegetable oil - 1/2 cup
- Vanilla essence - 1 TBSP
- Water - 1cup
Method -
- Mix flax seeds powder and 9 TBSP water (ratio is 1 TBSP flax seeds powder : 3 TBSP water). Mix well. And keep aside for 5-7 minutes.
- Preheat oven to 350 deg fahrenheit or 180 deg celcius.
- In a mixing bowl , add all the dry ingredients (wheat flour , baking soda, baking powder , sugar) . Mix well. Make sure there are no lumps in it.
- Add vegetable oil and warm vegan milk to the dry ingredients. Mix well. Whisk for 2-3 minutes. Do not over beat or else the cake would become hard.
- Add vanilla essence and whisk for another minute.
- Add a 1 TBSP boiling hot water and whisk well again for just a minute. (This is the step that will make sure your muffins get moist and fluffy.)
- In a muffin pan add the paper cups. Scoop your muffin batter in the cups.
- Bake muffins for 20 - 25 minutes in the preheated oven or until a skewer inserted into the muffin comes clean.
