Ingredients: For Vegan Vadiche Sambar Recipe
For Vadi -
- Besan - 1 cup
- Vegetable oil - 1 Tsp
- Turmeric powder - 1/2 Tsp
- Red Chili powder - 1/2 Tsp
- Coriander-cumin seeds powder - 1 Tsp
- Hing powder - 1/4 Tsp
- Ginger-garlic paste - 1 Tsp
- Salt to taste.
- Water - 1/4 Cup
For Sambar -
- Vegetable oil - 1 Tsp
- Mustard seeds - 1 Tsp
- Cumin seeds - 1 Tsp
- Hing powder - 1/2 Tsp
- Onion - finely chopped - 1
- Fried masala / Tala Masala - 1/2 cup

- Turmeric powder - 1 Tsp
- Red chili powder - 1 Tsp
- Salt to taste
- Tamarind concentrate - 1 Tsp
- Jaggery - 1 Tsp
- Coconut milk - 1/4 cup
- Water - 1 cup
- Finely chopped cilantro for garnishing.
How to Make Homemade Vegan Vadiche Sambar Recipe Step-by-Step Instructions
For Vadi -
- In a pan heat oil. Add besan and roast till the besan starts releasing aroma.
- Let the besan cool down. Add turmeric powder , chili powder , coriander-cumin powder , hing powder , salt to taste and ginger-garlic paste. Mix well.
- Add water and mix well to form thick paste.
- Grease a steamer plate with oil. Add the besan mixture to the plate. Steam on medium flame for 15 minutes.
- Cool the vadi and cut into diamond shape.
For Sambar -
- In a pan add vegetable oil. Once the oil is hot add mustard seeds , cumin seeds , hing powder and finely chopped coriander . Add finely chopped onion and saute till onion turns translucent .
- Add fried masala and mix well. Add turmeric powder , chili powder , salt to taste. Mix well and saute for 2-3 minutes.
- Add tamarind concentrate and jaggery and mix well.
- Add coconut milk and mix well.
- Add water . Bring to a nice boil.
- Add the besan vadi . Cover and cook for 5-7 minutes.
- Garnish with finely chopped cilantro and serve hot with roti or rice.
