Ingredients -

  1. For Stuffing -
  2. Potato - boiled - smashed - 1/2 cup
  3. Cauliflower - finely chopped - 1 cup
  4. Green Peas - 1/2 cup
  5. Vegetable oil - 1 Tsp
  6. Sunflower seeds - 1 TBSP
  7. Jeera / Cumin seed - 1 Tsp
  8. Fennel seeds / Sauf - 1 Tsp
  9. Coriander seeds - 1 Tsp
  10. Cumin seeds powder - 1 Tsp
  11. Ginger-garlic Paste - 1 Tsp
  12. Green Chili paste - 1 Tsp
  13. Hing powder - 1/4 Tsp
  14. Haldi / Turmeric powder - 1 Tsp
  15. Red chili powder - 1 Tsp
  16. Garam masala powder - 1 Tsp
  17. Water - 2 TBSP
  18. Cilantro - finely chopped
  19. Salt to taste.

For Gravy -

  1. Whole Tomatoes for stuffing - 3-4
  2. Whole Capsicum for stuffing - 3-4
  3. Vegetable Oil - 1 tbsp
  4. Cumin Seeds - 1 Tsp
  5. Ginger chopped - 1 Inch
  6. Green Chilli chopped - 1
  7. Turmeric Powder - 1/2 Tsp
  8. Coriander Powder - 1 Tsp
  9. Asafoetida - 1/4 Tsp
  10. Degi Red Chilli Powder - 1/2 Tsp
  11. Tomato Puree - 1 cup
  12. Salt to taste
  13. Sugar - 1/2 Tsp

Method -

For Stuffing

  1. In a pan, heat oil and add cumin seeds, fennel seeds, crushed coriander seeds, ginger, green chillies and saute for half a minute. Then add finely chopped cauliflower . Saute for a minute . Close the lid and cook the cauliflower for 3-4 minutes.Then add the boiled potatoes, salt, turmeric powder, degi red chilli powder, coriander powder, stir it once and add water then cover and cook for another 2-3 minutes. Keep aside for further use.

For Gravy

  1. For Gravy:

    1. Heat oil in a pan and add cumin seeds, ginger, green chilli, turmeric powder, coriander powder, asafoetida, and degi red chilli powder. Saut for half a minute.

    2. Now, add tomato puree, salt, butter, and stir it once. Let it boil for a minute on medium heat. Set it aside for further use.

    For Assembling Stuffed Tomato:

    1. Firstly, take the marinated tomatoes and stuff them tightly with the prepared stuffing.

    2. Place them in the gravy, cover with a lid, and simmer on low heat for 10-12 minutes.

    3. Serve hot with your choice of roti or rice. Enjoy your meal!
