Indulge in the delightful aroma and flavors of homemade stuffed pav, also known as stuffed dinner rolls. These soft, fluffy bread rolls are generously filled with a delicious potato and vegetable stuffing, making them a scrumptious treat for any meal.

Ingredients for Vegan Pav -
- Rava / Suji - Fine - 3.5 cups
- Non dairy milk / water - warm - 1 + 1/2 cup
- Sugar - 2 Tsp
- Yeast - 2 + 1/4 Tsp
- Salt - 1 + 1/2 Tsp
- Olive oil - 3 TBSP
For Stuffing -
- Potato - boiled - smashed - 1 cup
- Cauliflower - finely chopped - 1/2 cup
- Green Peas - 1/2 cup
- Vegetable oil - 1 Tsp
- Jeera / Cumin seed - 1 Tsp
- Fennel seeds / Sauf - 1 Tsp
- Coriander seeds - 1 Tsp
- Ginger-garlic Paste - 1 Tsp
- Green Chili paste - 1 Tsp
- Hing powder - Tsp
- Haldi / Turmeric powder - 1 Tsp
- Red chili powder - 1 Tsp
- Garam masala powder - 1 Tsp
- Water - 2 TBSP
- Salt to taste.
Method -
For stuffing -
- In a pan , add oil . Once hot add the jeera , fennel seeds , coriander seeds , hing powder. Add ginger garlic paste and green chili paste . Saute for a minute.
- Add boiled potatoes , cauliflower , green peas and mix well. Add the turmeric powder , red chili powder , garam masala , salt to taste and Mix well.
- Add water and mix well. Cover and cook the veggies on medium to low flame .
- Let the stuffing cool down completely .
For Pav -
- In a bowl add 1/2 cup warm non dairy milk or warm water , sugar and yeast. Mix well . Keep aside for 10 minutes .
- Get the fine rava or suji in a blender jar and pulse for 3-4 times to get a fine texture. If you do not get fine rava , then you can get any rava and just pulse it in fine powder.
- Add all rava to the yeast mixture. Knead for at least 10 minutes. Till you get a nice soft dough.
- Add 3 TBSP vegetable oil and again knead for 5 minutes. Cover and rest the dough for at least an hour.
- Dough raises almost double its size. Knead again . Divide the dough into lemon shape balls of equal size.
- Grease a baking tray with vegetable oil.
- Take one dough ball , and use the between the palm of your hands. Then gently stretch the sides to form a 3 inch cup. Place the stuffing in the center and cover the stuffing with covering carefully and roll into a ball.
- Place the balls in the greased tray. Brush them with non dairy milk or water. Cover and rest for 20 minutes.
- Dough ball rises almost twice in size. Alternatively sprinkle a seasoning of choice on the pav. Preheat an oven at 420 deg farenheit . Bake the rolls for 20 minutes.
- Brush with vegetable oil. Cover with moist cloth and keep aside for 20 minutes.
- Enjoy the fresh , warm Dinner rolls .
