Sambar, a beloved South Indian dish with a rich history, is a delightful and flavorful concoction that blends lentils, vegetables, and aromatic spices into a harmonious medley. While it may seem like a traditional dish that has been part of Indian cuisine for centuries, its origin tells a different story.
Ingredients South Indian Vegan Sambar Recipe
Sambar -
- Tovar dal - 2 cup
- Onion - 1 thinly sliced
- Potato - 3 medium - thinly sliced
- drum sticks - 3-4 pieces of 2-3 inches long
- Tomato - 1 thinly sliced
- Vegetable oil - 1 TBSP
- Hing / Asafoetida - 1/2 Tsp
- Turmeric powder - 1 Tsp
- Cumin seeds - 1 Tbsp
- Mohri / Black Mustard Seeds - 1 TSP
- Fenugreek seeds - 1 Tsp
- curry leaves - 4-5
- Whole red chillies - 3-4
- Red chilli powder - 1 Tsp
- Sambar Masala - 1 TBSP
- Tamrind concentrate - 1 TBSP
- salt to taste
- Cilantro for garnishing.
Method
Sambar -
Insta Pot -
- Start the pot on saute mode. Once hot add oil. Add the mustard seeds and let them spilt. Add cumin seeds, fenugreek seeds , Asafoetida , curry leaves and whole red chillies.
- Add onions. Saute them till they turn translucent.
- Add potatoes and drum sticks and any other vegetables of your choice. Mix well.
- Add tomatoes and mix well.
- Add turmeric powder , red chilli powder , sambar masala and salt to taste.
- Add tamrind concentrate and mix well. Add 1 cup water. Put a glass and lid and let it cook for 5 minutes.
- Add the tovar daal . Mix well.
- Switch the pot to pressure cooker mode, high pressure , steam closed and cook for 25 minutes.
- Let the steam release naturally by putting off the keep warm mode.
- Mix well Garnish with cilantro.
Kadai -
- Pressure cooker Tovar dal for 3 whitlses. Add turmeric powde r while presure cooking to dal.
- In a pot add oil once hot. Add the mustard seeds and let them spilt. Add cumin seeds, fenugreek seeds , Asafoetida , curry leaves and whole red chillies.
- Add onions. Saute them till they turn translucent.
- Add potatoes and drum sticks and any other vegetables of your choice. Mix well.
- Add tomatoes and mix well.
- Add turmeric powder , red chilli powder , sambar masala and salt to taste.
- Add tamrind concentrate and mix well. Add 1 cup water. Put a glass and lid and let it cook for 10 minutes.
- Add the tovar daal . Mix well. Add water to adjust consistemcy.
- Cook for another 10 minutes.
- Mix well Garnish with cilantro.
