For Cheese balls

  • Soy milk - 1 litre - full cream
  • Lemon juice - 2 TBSP
  • Water - 1 litre
  • Corn flour - 1 TBSP

For Rabdi -

  1. Soy Millk - 4 cups
  2. Sugar - 1 cup
  3. Saffron - 1 pinch

How to Make Gluten-free homemade ras malai Recipe Step-by-Step Instructions

  1. Boil 1 litre of soy milk. Cool it down. To curdle milk , add 2 tbsp lemon juice to warm soy milk.
  2. Strain the curdle milk to separate soy cheese. Wash the soy cheese with water to remove the sourness of lemon. Drain all the water . Remove the excess water by squeezing the soy cheese.
  3. Take the dried soy cheese and knead to soft dough. Add corn flour to make it more soft.
  4. Make small balls out of it and press gently to flattened it.
  5. In a pot add water and add 1 cup sugar. Boil it.
  6. After boil, add cheese balls and cook on high flame. We do not want to make sugar syrup , keep adding warm water to liquify it.
  7. For Rabdi - Heat a pan on medium flame. Add Soy milk and Kesar and bring it to nice boil. Lower the flame and simmer till you get a nice thick consistency. Keep stirring frequently to make sure milk does not stick to bottom. Add sugar and mix well.
  8. For plating - Place cheese balls , pour rabdi on them. Optionally Garnish with sliced almonds.
