Ingredients For Vegan Pav Bhaji

  1. cut caulifower , cut capsicum , cut french beans , cut potato - 1 cup each
  2. Green peas - 1/2 cup
  3. Onions - finely chopped
  4. Tomatoes - finely chopped
  5. ginger garlic paste - 1 TBSP
  6. turmeric - 1 Tsp
  7. red chilli powder - 1 Tsp
  8. Pav bhaji masala - 2 Tsp
  9. Vegetable Oil - 1
  10. Asafoetida - 1/4 Tsp
  11. Salt to taste

Garnishing -

Vegan Butter - I use Earth Balance , you can use one that suites you.

How To Make Vegan Pav Bhaji Step By Step Instruction

  1. In a pan or Insta pot saute mode add oil and het it up. Add Asafoetida .
  2. Add cut onions and saute till the onions are translucent.
  3. Add ginger-garlic paste and saute for a minute or 2.
  4. Add cut tomatoes. Add a pinch of salt and saute till tomatoes are nice and mushy.
  5. Add turmeric powder , red chilli powder , pav bhaji masala and adjust salt to taste. Mix well. Saute for another couple of minutes.
  6. Follow insta pot or kadai method as suitable.

Insta Pot Method -

  1. Add all the cut vegetables . Mix well.
  2. Add 2 cups water and mix well.
  3. Close the lid . Vent closing. Pressure cook for 20 minutes.
  4. Let the steam release naturally.
  5. Mix well. Put the saute mode on . Mash the vegetables using a potato masher. Saute for a couple of minute.
  6. Garnish with cut cilantro and vegan butter of your choice.

Kadai Method.

  1. Boil all the vegetables in a pressure cooker for 3 whistles. Once cooled doen , mash using a potato masher.
  2. Add the mashed vegetables to the masal made above. Mix well.
  3. Add water to adjust consistency.
  4. Close the lid and cook for 10 minutes.
  5. Garnish with cut cilantro and vegan butter of your choice.
