Ingredients For Vegan Mexican Rice Recipe
- Long grain rice / Basmati Rice - 1 cup
- Mixed vegetables - finely chopped beans , capsicum , carrots and corns - 1 and 1/2 cup
- Tomato puree - 1 tomato
- Onion - 1 finely chopped
- Tomato - 1 finely chopped
- Rajma - boiled - 1/2 cup
- Cumin seeds - 2 Tsp
- Coriander seeds - 1 Tsp
- Oregano - 1 Tsp
- Red chilli powder / paprika powder - 1 Tsp
- Vegetable oil - 1 TBSP
- Garlic - finely chopped - 3-4 cloves .
- Jalapenos or green chillies - chopped roughly - 2-3
- Salt to taste
Method For Mexican Rice -
- Dry roast cumin seeds and coriander seeds in a pan for 2-3 minutes until they start releasing aroma.
- Grind the roasted seeds with oregano into a fine powder and mix in red chilli powder.
- Cook long-grain rice with 2 cups of water and salt until fully cooked.
- In a pan, heat vegetable oil and saut onion until it turns soft.
- Add garlic and jalapenos and saut for another 2-3 minutes.
- Add mixed veggies and salt to taste. Mix well, cover and cook for 4-5 minutes or until the vegetables are cooked.
- Add tomato puree, grinded masala, boiled rajma, boiled rice and mix well.
- Add finely chopped tomato and stir. Cover and cook for 3-4 minutes.
- Serve hot with salsa or guacamole of your choice.
