Ingredients For Vegan Matar Karanji Recipe
For covering -
- Whole wheat flour - 1 cup
- Ajwain / Caraway seeds - 1 Tsp
- Salt to taste
- Vegetable oil - Hot - 2 Tsp
- Water - 1/4 cup
For Stuffing -
- Matar / Green Peas - 1 cup
- Freshly grated Coconut - 1/4 cup
- Vegetable oil - 1 TBSP
- Cumin seeds - 1 Tsp
- Hing powder - 1/4 Tsp
- Curry leaves - 4-5
- Ginger-Garlic - green chilies paste - 1 TBSP
- Turmeric powder - 1 Tsp
- Garam Masala - 1 Tsp
- Coriander - cumin seeds powder - 1 Tsp
- Salt to taste
- Lemon juice - 2 Tsp
- Water - 3-4 TBSP
For Assembly -
- Oil for deep frying.
Method For Preparing Matar Karanji
For Covering -
- In a pot add whole wheat flour , ajwain seeds , salt to taste. Add hot oil. Mix well , till the flour when squeezed holds shape. Add water , little at a time and knead into a soft dough. Brush with oil . Cover and keep aside for 30-40 minutes.
For Stuffing.
- In a pan add oil . Once hot , add cumin seeds , hing powder , curry leaves and ginger-garlic-green chilies paste. Saute for a minute or two.
- Add freshly grated coconut and mix well. Add garam masala , coriander-cumin seeds powder , turmeric powder and mix well.
- Add fresh green peas and mix well. Add water 2-3 TBSP . Cover and cook for 5-7 minutes.
- Add salt to taste and mix well. Cover and cook for another 2-3 minutes. Add freshly squeezed lemon juice and mix well. Let the mixture cool down completely.
For Assembling -
- Take a small lemon size ball of dough. Roll it into a round disc. Size of a puri.
- Fold disc into half. Fill in the stuffing. Brush the edges with water and seal them together. This way, prepare all karanjis.
- Heat oil in kadai for deep frying. Once hot , deep fry all karanji to a nice golden brown color.
