Ingredients:
- Macaroni - 1 cup - for gluten free use gluten free version that you get in the market.
- Water - 3 cups
- Non dairy milk - 1 cup
- Onion - 1 finely chopped
- Garlic - 1 TBSP - finely chopped
- Green capsicum - 1/4 cup - finely chopped
- Yellow capsicum - 1/4 cup - finely chopped
- Red capsicum - 1/4 cup - finely chopped
- Olive oil - 2 TBSP
- All purpose flour - 1 TBSP
- Chili flakes - 2 Tsp
- Dried basil - 1 Tsp
- Dried Oregano -1 Tsp
- Dried Thyme - 1 Tsp
- Black Pepper powder - 1 Tsp
- Non dairy mozzarella cheese - 1/4 cup
- Salt to taste
Method For Preparing Vegan Mac And Cheese Macaroni -
- In a saucepan add 3 cups of water, 1/4 Tsp salt, and 1 cup of macaroni.
- Cook on medium heat till the macaroni gets cooked.
- Do not overcook else the pasta will get all lumpy and lose its texture.
- Drain the excess water and keep it aside for later use.
- Heat a saucepan on medium heat.
- Add 1 TBSP of olive oil, chopped onion, and finely chopped garlic. Saute till the onions turn translucent.
- Now add green, yellow, and red capsicum.
- Mix all of them well and saute for 2-3 minutes.
- Add salt to taste, 1 Tsp Chili flakes, 1/4 Tsp of each: dried basil, oregano, thyme, freshly ground black pepper.
- And give it a nice mix.
- At this stage add cooked Macaroni and mix it well.
- Switch off the gas and save it for later use.
- Again take another pan and heat on medium flame.
- Add 1 TBSP of olive oil.
- Add all-purpose flour. For gluten-free substitute with white corn flour.
- Mix it well with oil to get a lump-free sauce base and saute for a minute.
- Include non-dairy milk and whisk it with the sauce base to get a lump-free sauce.
- cook slowly on a low flame.
- Add salt as required, 1 Tsp chili flakes, 1/4 Tsp of each: dried basil, oregano, thyme, freshly ground black pepper.
- Give it a nice mix.
- You can see that a thick, creamy sauce is ready.
- Now we will add the cooked macaroni and vegetables which we have kept aside.
- Mix them nicely.
- Put non-dairy mozzarella cheese.
- Mix them well, till the cheese starts to melt.
- It’s ready to eat.
- Use the bowl of your choosing to serve it
