Vegan Kadai Tofu: A Flavorful Plant-Based Delight

Ingredients -

  1. Tofu - thick slices or pieces - 1 cup
  2. Onion - chopped in rough pieces - 1
  3. Capsicum - Finely sliced - 1
  4. Tomato - finely sliced - 1
  5. Onion - finely chopped - 1
  6. Tomato - pureed - 2
  7. Ginger -Garlic paste - 1 TBSP
  8. Coriander seeds - 2 Tsp
  9. Cumin seeds / Jeera - 1 Tsp
  10. Black pepper - 1/2 Tsp
  11. Whole Red chilli - 3-4
  12. Bay leaf - 1
  13. Hing powder -  1/4 Tsp
  14. Turmeric powder - 1 Tsp
  15. Red chili powder - 1 Tsp
  16. Vegetable oil - 2 Tsp
  17. Salt to taste .

Method -

  1. In a pan add coriander seeds , cumin seeds , black pepper and whole red chillies . Roast on low heat till they just start releasing aroma. Cool the spices and grind them into a coarse powder.
  2. In a pan or kadai heat 1 Tsp oil . Add hing and bay leaf to it. Add finely chopped onions and saute till they become translucent. Add ginger-garlic paste and saute for another minute or 2 .
  3. Add tomato puree and saute for 2-3 minutes. Add turmeric powder , red chili powder and salt to taste . Saute for another 2-3 minutes.
  4. Add half of the grinded masala . Saute for 2-3 minutes . Keep the gravy aside.
  5. In another pan , heat 1 Tsp of oil. Add roughly chopped onion and saute for just a minute. Add sliced tomato , sliced capsicum , salt to taste and give the veggies a toss. Do not over cook , maintain the crunchy bite of the capsicum.
  6. Add Tofu , remaining grinded masala and mix lightly .
  7. Add the veggies to the cooked masala or gravy. Mix well. Garnish with finely chopped cilantro. Serve hot with your choice of paratha or roti.
