Vegan Jeera Varan Recipe

Jeera Varan, a beloved dish from the heart of Maharashtra, India, has been a source of comfort and nourishment for generations. Traditionally, Varan is a simple lentil soup made with toor dal (split pigeon pea) and flavored with minimal spices, primarily cumin seeds. In this vegan adaptation, we retain the essence of the original recipe while enhancing its flavor profile. Jeera Varan, as the name suggests, features the earthy warmth of cumin seeds as the star ingredient. These tiny seeds impart a distinct nutty and slightly citrusy flavor, elevating the humble lentil soup into a culinary masterpiece.

Ingredients For Vegan Jeera Varan Recipe

  1. Tuvar Dal / Split pigeon pea - 2 cups
  2. Hing / Asafoetida - 1/2 Tsp
  3. Turmeric powder - 1 Tsp
  4. Cumin seeds - 1 Tbsp
  5. Green chillies - 3-4 chopped in small pieces
  6. Curry leaves -5-6
  7. Sugar - 1/2 TSP
  8. Vegetable oil - 1 Tbsp
  9. salt to taste
  10. water to adjust consistency.

Method

  1. Wash the dal thoroughly , add 1/4 tsp hing powder , turmeric powder , 2 cups water. Pressure cook for 3 whistles on medium flame.
  2. For Tampering heat a pan on medium heat. Add oil. Once hot add cumin seeds , after they tamper add hing powder , add chopped green chilies , curry leaves.
  3. Add the boiled dal and mix well. Add water to adjust consistency.
  4. Add the salt to taste , sugar and mix well.
  5. Garnish with finely chopped cilantro and freshly grated coconut.
  6. Serve with hot rice with a side of pickle and pappad.
