Jeera Varan, a beloved dish from the heart of Maharashtra, India, has been a source of comfort and nourishment for generations. Traditionally, Varan is a simple lentil soup made with toor dal (split pigeon pea) and flavored with minimal spices, primarily cumin seeds.

Ingredients For Vegan Jeera Varan Recipe
- Tuvar Dal / Split pigeon pea - 2 cups
- Hing / Asafoetida - 1/2 Tsp
- Turmeric powder - 1 Tsp
- Cumin seeds - 1 Tbsp
- Green chillies - 3-4 chopped in small pieces
- Curry leaves -5-6
- Sugar - 1/2 TSP
- Vegetable oil - 1 Tbsp
- salt to taste
- water to adjust consistency.
Method
- Wash the dal thoroughly , add 1/4 tsp hing powder , turmeric powder , 2 cups water. Pressure cook for 3 whistles on medium flame.
- For Tampering heat a pan on medium heat. Add oil. Once hot add cumin seeds , after they tamper add hing powder , add chopped green chilies , curry leaves.
- Add the boiled dal and mix well. Add water to adjust consistency.
- Add the salt to taste , sugar and mix well.
- Garnish with finely chopped cilantro and freshly grated coconut.
- Serve with hot rice with a side of pickle and pappad.
