Ingredients  For Vegan Home Style Bhindi Recipe

  1. Bhindi / Ladies finger / Okara - cut into 1 inch cubes - 2 cups
  2. Onion - finely chopped - 1
  3. Tomato - finely chopped - 1
  4. Vegetable - 1 TBSP
  5. Mohri / Mustard seeds - 1 Tsp
  6. Jeera / Cumin seeds - 1 Tsp
  7. Hing powder - 1/4 Tsp
  8. Turmeric powder - 1 Tsp
  9. Red chili powder - 1 Tsp
  10. Garam Masala powder - 2 Tsp
  11. Cilantro for garnishing
  12. Salt to taste

Method - 

  1.  Heat a Pan on medium flame. Once hot add oil. Once the oil is hot, add mustard seeds. Once they splutter, add cumin seeds and hing powder. Add Onions and sauté till they turn translucent. Add chopped tomatoes and sauté till they turn mushy. Add turmeric powder, chili powder, garam masala, salt to taste. Mix well and sauté for another 2-3 minutes.
  2. Add cut bhindi and mix well. Lower the flame and cook on medium to low flame. Secret for non-sticky bhindi is cooking on low flame and stirring.  Do not cover while cooking. 
  3. Garnish with finely chopped cilantro and serve hot with roti or rice.
