Ingredients Vegan Gatte Ka Pulao
For Gatte -
- Gram Flour / Besan - 3/4 cup
- Turmeric powder - 1/2 tsp
- Red Chilli powder - 1 tsp
- Coriander seeds powder - 1 tsp
- Cumin seeds - 1 tsp
- Ajwain - 1/4 tsp
- Salt 1/2 + 1 tsp
- Oil - 1 Tsp
- Water - 1/4 cup + 2 cups
For Pulao -
- Basmati Rice 1 cup - washed thoroughly
- Potato 1 - diced
- Onion 1 - finely chopped
- Vegetable oil - 1 TBSP
- Black Cardamom 1
- Cinnamon 1 inch
- Bay leaf 1 leave
- Star anise- 1
- Cloves 2
- Black Pepper 5
- Cumin seeds - 1 Tsp
- Turmeric powder - 1 Tsp
- Red chili powder - 1 Tsp
- Garlic 8 to 10 cloves
- Green Chilli 2, chopped
- Coriander seeds powder 1 tsp
- Cumin powder - 1/2 Tsp
- Asafoetida 1/4 tsp
- Ginger paste 1 TBSP
- Tomato (medium size) 1, chopped
- Salt to taste
- Coriander leaves (chopped)
Method -
For Gatte -
- In a mixing bowl, add besan, turmeric, red chili powder, coriander powder, cumin powder, and salt to taste. Mix well.
- Gradually add a little water at a time and knead into a semi-soft dough.
- Take a lemon-sized ball of dough and roll it into a cylindrical shape.
- Heat 2 cups of water in a pot. Once the water comes to a boil, add the rolled dough balls to it.
- Cook for 5-6 minutes on medium heat until the dough balls float on the water and bubbles can be seen on them.
- Remove the cooked gatte gently and keep them aside for later use.
For Pulao -
- In a pot, add 1 tablespoon of oil and heat it. Stir-fry the sliced potatoes until they turn golden brown. Remove and keep them aside.
- Next, add the cooked gatte to the pot and stir-fry them until they turn a nice golden color. Remove and keep them aside.
- In the same oil, add the whole masalas: whole black cardamom, cloves, black pepper, cinnamon stick, and bay leaf. Saute them for 10-15 seconds.
- Add cumin seeds and hing powder.
- Add chopped onion and green chilies. Saute until the onions turn translucent.
- Add garlic paste and saute for another minute.
- Add the fried potatoes, gatte, and washed rice. Mix well.
- Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt to taste. Mix well.
- Add chopped tomatoes and give it a quick mix.
- Add 2 cups of water. Cover and cook for 8-10 minutes on medium heat until all the water is absorbed.
- Lower the flame and simmer for another 10 minutes.
