Ingredients For Vegan Chawli Usal Curry

  1. Chawli - 1 cup - sprouted
  2. Onion finely chopped - 1
  3. Ginger - Garlic paste - 1 TSP
  4. Vegetable oil - 1 TBSP
  5. Mustard seeds - 1 TSP
  6. Cumin seeds - 1 TSP
  7. Hing powder - 1/4 Tsp
  8. Turmeric powder - 1 Tsp
  9. Red Chilli powder - 1 Tsp
  10. Amsul / kokum - 4-5
  11. Goda Masala / Garam Masala - 1 TBSP
  12. Jaggery - 1/4 TSP
  13. Salt to taste.
  14. Freshly grated coconut - coarsely grinded - 1/4 cup
  15. Cilantro - finely chopped for serving

Method

  1. Sprout the Chawli .
  2. Heat a Pan on medium flame. Once hot add oil.
  3. Once the oil is hot add mustard seeds. Once they splutter , add the cumin seeds and hing powder.
  4. Add Onions and saute till they turn translucent.
  5. Add ginger garlic paste and saute for a minute.
  6. Add turmeric powder , chilli powder, goda masala , salt to taste. Mix well and saute for another 2-3 minutes.
  7. Add sprouted chawli. Mix well.
  8. Add the jaggery , amsul and mix well.
  9. Add warm water to adjust consistency. Cover and let it cook till chawli gets cook.
  10. Add grinded , fresh coconut. MIx well and get to a nice boil for 2-3 minutes.
  11. Garnish with cilantro and serve hot with rice or roti.
