Veg Kolhapuri Ingredients:

Vegetables For Veg Kolhapuri:

  • 1 cup Cauliflower florets
  • 1/2 cup Carrots, cut into cubes
  • 1/2 cup French beans, cut into 1-inch pieces
  • 1/2 cup Green Peas
  • 1/2 cup diced Green Capsicum
  • 1/2 cup diced Onion

Masala For Veg Kolhapuri:

  • 2 TBSP Coriander Seeds
  • 1 TBSP Cumin seeds
  • 2 Bay leaves
  • 1/2 inch Cinnamon stick
  • 1 Star Anise
  • 3-4 Black pepper corns
  • 3-4 Cloves/Lavang
  • 4 Dry Red chilies
  • 1 TBSP Poppy seeds
  • 2 TBSP Dry coconut
  • 1 TBSP Oil

Gravy For Veg Kolhapuri:

  • 1/2 cup finely chopped Onion
  • 1 TBSP Ginger-Garlic paste
  • 2 Tomato pureed
  • 1 Tsp Turmeric powder
  • 1 Tsp Red chili powder
  • Salt to Taste
  • 1 TBSP Oil

Veg Kolhapuri Recipe Method:

  • Masala:

Heat oil in a pan on medium flame. Roast all dry masalas including coconut till the coconut turns brown. Cool and dry grind into a fine powder.

  • Vegetables:

In a pan, heat 1 tsp oil on medium flame. Saut cauliflower and carrots for 2-3 minutes. Add the rest of the vegetables, saut for another 3-4 minutes. Remove and keep aside.

  • Gravy:
  • Heat oil in a Kadai. Saut finely chopped onions till golden. Add ginger-garlic paste and saut for 2 minutes.
  • Add the ground masala powder, mix well. Pour 1/2 cup hot water and let the masala cook till it releases oil.
  • Add tomato puree, salt, turmeric powder, red chili powder. Cook for 3-4 minutes.
  • Add cooked vegetables and water for consistency. Simmer for 8-10 minutes.
  • Garnish with cilantro. Serve hot with Bhakri, naan, or roti.
