Ingredients Vegan Achari Tofu Biryani
- Basmati Rice - 2 cups - washed and soaked for 15-20 minutes.
- Water to cook rice - 4 cups
- Cloves/Lavang - 4-5
- Black Pepper - 4-5
- Cinnamon - 1 inch - pieces
- Bay leaf - 2-3 pieces
- Kali elaichi / black cardamom - 1
- Green cardamom - 2-3
- Ajwain / Caraway seeds - 1 Tsp
- Fennel seeds / Saunf - 1 Tsp
- Star anise - 1
- Carrots - finely slit - 1 cup
- Capsicum - finely slit - 1 cup
- Tofu - cut in thin cubes - 1 cup
- Onion - 1 - finely chopped
- Tomato - puree - 1 cup
- Ginger-garlic paste - 1 TBSP
- Turmeric powder - 1 Tsp
- Red chilli powder - 1 TSP
- Achari Masala - 2 TBSP
- Hing powder - 1/4 Tsp
- Vegetable oil - 2 TBSP
- Salt to taste
- Finely chopped cilantro for garnishing.
Method For Preparing Achari Tofu -
- Boil water in a pot and add black whole spices, vegetable oil, and salt.
- Add soaked rice and cook till it is 3/4th done. Drain the excess water and set aside to cool.
- Heat oil in a pan, add hing powder, ajwain, and saunf seeds. Then, add onions and ginger-garlic paste and saute until translucent.
- Add tomato puree and spices like turmeric, red chili powder, and achari masala. Mix well.
- Add carrots, sprinkle some water, cover, and cook till they are tender.
- Add capsicum and tofu, cook for 2-3 minutes.
- In a deep bottomed pan, spread a layer of veggies and then a layer of rice. Repeat the layers.
- Cover with a lid and cook on slow flame or on a tava/griddle for 30-40 minutes.
- Let it rest for 5-7 minutes before serving.
- Serve hot with raita, onion salad, pickle, or papad.
