Ingredients For Vegan Hakka Noodles

  1. Noodles - 1 pack - You can use Gluten Free Noodles for gluten free option
  2. Carrots - sliced - 1/2 cup
  3. Cabbage - finely chopped or sliced - 1/2 cup
  4. Capsicum - finely sliced - 1/2 cup
  5. Spring onions - finely chopped - 1/2 cup
  6. Onion - finely sliced - 1
  7. Ginger - Garlic - finely chopped - 1 TBSP
  8. Green chili - slit - 1
  9. Soy sauce - 2-3 TBSP
  10. Water - 8 cups
  11. Black Pepper powder to taste
  12. Salt to taste
  13. Vegetable oil

How To Make Veg Hakka Noodles Step By Step Instructions

  1. To boil noodles - add water , 1 Tsp salt and 1 Tsp oil to a pot. Let the water come to boil. Add noodles and mix well. Let the noodles cook till they are just cooked or have a bite to them . Drain the excess water and wash the noodles with cold water . Keep them aside.
  2. Heat a wok on high heat . Add oil , ginger garlic , green chili and sliced onions. Saute well for just a minute.
  3. Add all the veggies , save some spring onion for garnishing . Saute all the vegetables. Add salt to taste , black pepper powder , soy sauce and mix well.
  4. Add cooked noodles and mix well. Toss on high flame for a couple of minutes.
  5. Garnish with spring onions and serve hot with a side of chilli sauce .
