Veg dum biryani is a delicious and flavorful dish made with a blend of aromatic spices, fresh vegetables, and long-grain basmati rice. It is a perfect dish for special occasions or when you want to treat yourself to something special.

Ingredients
- Basmati Rice - 2 cups - washed and soaked for 15-20 minutes.
- Water to cook rice - 4 cups
- Cloves/Lavang - 4-5
- Cinnamon - 1 inch - pieces
- Bay leaf - 2-3 pieces
- Kali elaichi / black cardamom - 3-4
- Star anise - 3-4
- Mixed cut vegetables of your choice - 3 cups
- Onion - 1 - finely sliced lengthwise.
- Tomato - 2 finely sliced lengthwise.
- Ginger-garlic paste - 1 TBSP
- Turmeric powder - 1/2 Tsp
- Red chilli powder - 1 TSP
- Garam masala powder - 1 TBSP
- Hing powder - 1/4 Tsp
- Vegetable oil - 2 TBSP
- Salt to taste
- Finely chopped cilantro for garnishing.
Method For Preparing Veg Dum Biryani -
- Boil water in a pot and add black cardamom, star anise, cloves, 1 cinnamon stick, 1 tsp vegetable oil, and salt to taste.
- Once the water boils, add soaked rice and cook for 5 minutes or until 3/4 done. Drain the excess water, wash rice with cold water and set aside to cool down.
- Heat a pan over medium heat, add oil and hing powder. Add cinnamon stick and bay leaf.
- Saute onions until translucent, then add ginger-garlic paste and saute for 2-3 minutes.
- Add mixed vegetables and mix well. Add turmeric powder, red chilli powder, 1 tsp garam masala, and salt to taste. Mix well.
- Add sliced tomatoes, cover and cook for 2-3 minutes. If the mixture is too dry, sprinkle some water. Cook until the vegetables are nicely done.
- To assemble the biryani, take a deep bottomed pot and spread a layer of vegetables. Add a layer of rice, sprinkle some salt, garam masala, and cilantro. Repeat the steps until all the veggies and rice are used up, with the last layer being rice.
- Cover the pot with a tight fitting lid and cook on low flame for 30-40 minutes. Alternatively, keep a tava or griddle on the flame and place the biryani pot on top. Cook for 30-40 minutes on low flame.
- Let the biryani rest for 5-7 minutes before serving. Serve equal portions of rice and vegetables with your choice of raita, onion salad, pickle, or papad.
