Ingredients For Vegan Stuffed Appe

For Stuffing -

  1. Potato - boiled -mashed - 1 cup
  2. Onion - finely chopped - 1/2
  3. Cilantro - finely chopped - 1 TBSP
  4. Amchur powder - 1/2 Tsp
  5. Haldi powder / Turmeric powder - 1 Tsp
  6. Red chili powder - 1 Tsp
  7. Coriander - cumin powder - 1 Tsp
  8. Salt to taste.

For Appe -

  1. Appe batter ( I used the same that usually use to make idlis - https://www.gruballergy.com/idli-sambar )
  2. Vegetable oil
  3. Mustard seeds / Mohri
  4. Curry leaves.

Method -

For stuffing -

  1. In a mixing bowl , add boiled smashed potatoes , onion , cilantro , amchur powder , haldi powder , red chili powder , coriander-cumin powder , salt to taste and Mix well.
  2. Make small balls of stuffing and keep aside.

For appe -

  1. Heat a appe pan on medium heat. Add 3-4 drops of oil in each socket . Add a few seeds of mohri and a few pieces of curry leaves.
  2. Add the first layer of appe batter. Add one ball of stuffing and then add another layer of appe batter.
  3. Cover and cook for 4-5 minutes on low to medium heat.
  4. Flip the appe and sprinkle a few drops of oil in each socket . COver and cook for 2-3 minutes.
  5. Serve hot with coconut chutney of your choice.
