Ingredients For Vegan Stuffed Appe
For Stuffing -
- Potato - boiled -mashed - 1 cup
- Onion - finely chopped - 1/2
- Cilantro - finely chopped - 1 TBSP
- Amchur powder - 1/2 Tsp
- Haldi powder / Turmeric powder - 1 Tsp
- Red chili powder - 1 Tsp
- Coriander - cumin powder - 1 Tsp
- Salt to taste.
For Appe -
- Appe batter ( I used the same that usually use to make idlis - https://www.gruballergy.com/idli-sambar )
- Vegetable oil
- Mustard seeds / Mohri
- Curry leaves.
Method -
For stuffing -
- In a mixing bowl , add boiled smashed potatoes , onion , cilantro , amchur powder , haldi powder , red chili powder , coriander-cumin powder , salt to taste and Mix well.
- Make small balls of stuffing and keep aside.
For appe -
- Heat a appe pan on medium heat. Add 3-4 drops of oil in each socket . Add a few seeds of mohri and a few pieces of curry leaves.
- Add the first layer of appe batter. Add one ball of stuffing and then add another layer of appe batter.
- Cover and cook for 4-5 minutes on low to medium heat.
- Flip the appe and sprinkle a few drops of oil in each socket . COver and cook for 2-3 minutes.
- Serve hot with coconut chutney of your choice.
