Ingredients: For vegan solkadi drink

  1. Kokum - 5-6
  2. Water - warm - 1 cup
  3. Freshly grated coconut - 1 cup
  4. Garlic pod -1
  5. Green chilies - 1
  6. Salt to taste
  7. Mustard seeds - 1/2 TSP
  8. Vegetable oil - 1 TSP
  9. Finely chopped cilantro for garnishing

How to Make Vegan solkadhi Step-by-Step Instructions

  1. Soak the kokum pods in warm water for 30-45 minutes.
  2. Squeeze the pods to extract the juices, drain the pods and retain the warm water with the extract in it.
  3. In a mixer-grinder, blend together the freshly grated coconut , garlic , green chilli with enough water to make a smooth paste. Strain the paste through a fine sieve to extract fresh coconut milk from it.
  4. Repeat the process 1 more time. Keep in mind the coconut milk gets thinner with every extraction.
  5. Add the kokum to kokum milk and add salt to taste. Mix well.
  6. This is the basic version of sol kadhi ready. Usually made in Goa and Karwar side
  7. If you wish to add a tempering. Heat 1 TSP of vegetable oil . Once hot add mustard seeds . Let mustard seeds splutter nicely. Add the hot tempering to coconut-kokum mixture.
  8. Garnish with finely chopped cilantro.
  9. Serve cold with rice. As kokum is a good digestive, this is usually served as a drink with non-vegetarian food.
