Ingredients: For vegan solkadi drink
- Kokum - 5-6
- Water - warm - 1 cup
- Freshly grated coconut - 1 cup
- Garlic pod -1
- Green chilies - 1
- Salt to taste
- Mustard seeds - 1/2 TSP
- Vegetable oil - 1 TSP
- Finely chopped cilantro for garnishing
How to Make Vegan solkadhi Step-by-Step Instructions
- Soak the kokum pods in warm water for 30-45 minutes.
- Squeeze the pods to extract the juices, drain the pods and retain the warm water with the extract in it.
- In a mixer-grinder, blend together the freshly grated coconut , garlic , green chilli with enough water to make a smooth paste. Strain the paste through a fine sieve to extract fresh coconut milk from it.
- Repeat the process 1 more time. Keep in mind the coconut milk gets thinner with every extraction.
- Add the kokum to kokum milk and add salt to taste. Mix well.
- This is the basic version of sol kadhi ready. Usually made in Goa and Karwar side
- If you wish to add a tempering. Heat 1 TSP of vegetable oil . Once hot add mustard seeds . Let mustard seeds splutter nicely. Add the hot tempering to coconut-kokum mixture.
- Garnish with finely chopped cilantro.
- Serve cold with rice. As kokum is a good digestive, this is usually served as a drink with non-vegetarian food.
