Ingredients -
- Drum sticks - 10-12 pieces of 2-3 inches long
- Onion - finely chopped - 1
- Besan - 1 TBSP
- Coconut- Fresh - grinded into a paste - 1/4 cup
- Hing / Asafoetida - 1/2 Tsp
- Turmeric powder - 1 Tsp
- Mustard seeds - 1 TSP
- Cumin seeds - 1 Tsp
- Curry Leaves - 4-5
- Red chilli powder - 1 Tsp
- Coriander seeds powder - 1 Tsp
- Cumin seeds powder - 1/2 Tsp
- Jaggery - 1 TBSP
- Tamarind concentrate - 1 Tsp
- Vegetable oil - 1 Tbsp
- salt to taste
- water to adjust consistency.
Method -
- Heat a pan on medium heat. Once hot add vegetable oil. Add mustard seeds , let them splitter. Add cumin seeds , hing powder and curry leaves. Add onion and saute till they turn translucent.
- Add drumsticks and mix well. Add the dry masalas - turmeric powder , red chili powder , coriander powder , cumin powder , salt to taste . Mix well. Add 1 cup of water . Cover and cook on medium flame for 7-8 minutes.
- Add grinded coconut paste , besan slurry ( Besan + 1 TBSP water ) , tamarind concentrate and jaggery . Mix well. Cook on medium flame for 3-4 minutes.
- Garnish with finely chopped cilantro. Serve hot with your choice rice or chapati.
