Ingredients -

  1. Drum sticks - 10-12 pieces of 2-3 inches long
  2. Onion - finely chopped - 1
  3. Besan - 1 TBSP
  4. Coconut- Fresh - grinded into a paste - 1/4  cup
  5. Hing / Asafoetida - 1/2 Tsp
  6. Turmeric powder - 1 Tsp
  7. Mustard seeds - 1 TSP
  8. Cumin seeds - 1 Tsp
  9. Curry Leaves - 4-5
  10. Red chilli powder - 1 Tsp
  11. Coriander seeds powder - 1 Tsp
  12. Cumin seeds powder - 1/2 Tsp
  13. Jaggery - 1 TBSP
  14. Tamarind concentrate - 1 Tsp
  15. Vegetable oil - 1 Tbsp
  16. salt to taste
  17. water to adjust consistency.

Method -

  1. Heat a pan on medium heat. Once hot add vegetable oil. Add mustard seeds , let them splitter. Add cumin seeds , hing powder and curry leaves. Add onion and saute till they turn translucent.
  2. Add drumsticks and mix well. Add the dry masalas - turmeric powder , red chili powder , coriander powder , cumin powder , salt to taste . Mix well. Add 1 cup of water . Cover and cook on medium flame for 7-8 minutes.
  3. Add grinded coconut paste , besan slurry ( Besan + 1 TBSP water ) , tamarind concentrate and jaggery . Mix well. Cook on medium flame for 3-4 minutes.
  4. Garnish with finely chopped cilantro. Serve hot with your choice rice or chapati.
