Ingredients For Pakatali Puri's -

  1. Sooji rava - 1/4 cup
  2. Maida - 1/4 cup
  3. Hot vegetable oil - 1 TBSP
  4. Sugar - 1 cup
  5. Water - 1/2 cup
  6. lemon juice - 1 TBSP
  7. Cardamom powder - 1/4 Tsp
  8. Saffron - 1/4 Tsp
  9. Salt - 1/4 Tsp
  10. Vegetable oil for deep frying .

Method -

  1. Mix sooji, all-purpose flour,salt and hot oil. Using 1-2 tablespoons of warm water knead the flour to make firm dough. Let the dough sit for 45 mins.
  2. Make a big ball out of the dough and roll into a disc. Using a cookie cutter or sharp edge bowl cut them into 2 inch circles.
  3. Make the sugar syrup by boiling the sugar with 1/2 cup water, lemon juice and saffron together for 4-5 mins on medium heat. Syrup should look translucent when ready.
  4. Heat vegetable oil in a small frying pan at medium-low heat. Fry 3-4 puri's at a time until they are lightly golden on both sides. Take them out of the oil and dip them in the sugar syrup. Keep the fried puri's in the syrup until the next batch of puris are being fried. Then take the puri out of the syrup using a pair of tongs. Repeat this process of frying and soaking in the syrup for the rest of the puris. These Puri's can be stored at room temperature for 3-4 days.
