For Uttapam Batter -
- Urad dal - 1 cup
- Idli Rice - 2 cup
- Fenugreek Seeds - 2 TBSP
- Water to soak
- Salt to taste.
For Uttapam -
- Onion - finely chopped - 1/2
- Green chilies - finely chopped - 2-3
- Freshly grated coconut.
- Cilantro - finely chopped.
- Vegetable oil
Method -
For Batter -
- Wash idli rice and urad dal 2-3 times thoroughly with water. Add fenugreek seeds , and water to washed dal and rice. Soak overnight or 7-8 hours.
- Grind rice and dal into a smooth paste. Cover and keep in a warm place for 10-12 hours for fermenting.
For Uttapam -
- Take a small portion of batter. Add salt to taste and water to adjust the consistency. It should be flowing consistency like pancakes.
- Heat a Pan on medium flame. Once hot grease it with oil.
- Take a ladle full of batter and spread on a pan in circular motion to form a thin pancake.
- Add finely chopped onion , finely chopped green chilies , coconut and cilantro. Let it cook on medium heat for 3-4 minutes. Till the side turns brown.
- Sprinkle some oil and flip . Cook from the other side for a couple of minutes. .
- Serve hot with your choice of chutney or sambar.
