Ingredients For Vegan Lima Beans Curry Recipe
- Lima beans - 2 cup
- Onion - finely chopped - 1 small
- Tomato finely chopped - 1
- Black mustard seeds - 1 Tsp
- Cumin seeds - 1 Tsp
- Hing powder - 1/4 Tsp
- Turmeric powder - 1 Tsp
- Red Chilli powder - 1 Tsp
- Sabji Masala / Goda masala / Garam masala- 1 Tsp
- Vegetable Oil - 2 TBSP
- Salt to taste.
Method
- Heat a pan on medium heat and add oil.
- Once the oil is hot add mustard seeds. Once they splutter , add the cumin seeds and hing powder.
- Add finely chopped onions and saute well and cook till onions turn translucent .
- Add finely chopped tomatoes and cook till they turn mushy.
- Add red chilli powder , sabji masala , turmeric powder and mix well. Add salt to taste mix well. Saute for another 2-3 minutes.
- Add lima beans and mix well.
- Add water to adjust consistency . Cover and cook until the beans are cooked.
- Garnish with finely chopped cilantro. Severe hot with rice or roti.
