Ingredients For Vegan Khara Pongal

for pressure cooking:

  1. Rice (rinsed) - 1/2 cup
  2. Moong dal (rinsed) - 1/2 cup
  3. Vegetable oil - 1 Tsp
  4. Water - 4 cups

for tempering:

  1. Vegetable oil - 1 TBSP
  2. Pepper cons - 1 Tsp
  3. Cumin / jeera - 1 Tsp
  4. Ginger (finely chopped) - 1 inch
  5. Hing / asafoetida - 1/4 Tsp
  6. Curry leaves - 8-10
  7. Dry Red chilli - 2-3
  8. Salt to taste .

Method For Preparing Vegan Khara Pongal

  1. In a pressure cooker, add vegetable oil and heat it.
  2. Once hot, add rice and dal to the pressure cooker.
  3. Saute the rice and dal until they turn aromatic.
  4. Add water to the pressure cooker and close the lid.
  5. Pressure cook the rice and dal mixture for 3-4 whistles.
  6. In a separate pan, add vegetable oil and heat it.
  7. Once hot, add pepper corns, finely chopped ginger, jeera, hing, and curry leaves to the pan.
  8. Mix the ingredients well in the pan.
  9. Break the red chilies in half and add them to the tempering mixture.
  10. Once the tempering is ready, add it to the cooked rice and dal in the pressure cooker.
  11. Add salt to taste and mix the ingredients well.
  12. If needed, adjust the consistency by adding water and mixing well.
  13. Simmer the mixture on low heat for 2-3 minutes.
  14. Serve the Khara Pongal hot and enjoy!
