Another one in my list of Halwa / pudding. This Vegan , allergy friendly gajar (carrot) halwa is yum and must have dessert.

This Recipe is free from :

  • Wheat
  • Peanuts
  • tree nuts
  • dairy
  • casein
  • soy
  • egg
  • sesame
  • fish
  • shellfish

Ingredients

  1. Carrots - finely grated - 2 cups.
  2. Almond milk or any other non dairy milk - 1/2 cup
  3. Sugar - 1/2 cup
  4. Almond flour - 1/4 cup - Optional
  5. Raisins - 1 TBSP
  6. Cardamom powder - 1 TSP
  7. Vegetable oil - 1 TSP

Method

  1. In a pan heat oil on medium heat. Once hot add grated carrot. Saute for a minute or so. Add non dairy milk. Close lid and cook on slow flame. carrot leaves water when it starts cooking. Cook till carrot is well cooked and the mixture is dry .
  2. Add almond flour and mix well - This is optional if you want nut free then skip this step.
  3. Add sugar and mix well. Sugar will start melting.
  4. Add raisins and cardamom powder and mix well.
  5. Cook till mixture gets dry.
  6. Serve hot or if you like chilled dessert refrigerate halwa and enjoy.
