Ingredients For Butternut Squash Bhaji Recipe

  1. Butternut Squash - Peeled and cut into small cubes - 1 Cup
  2. Vegetable oil - 1 TBSP
  3. Mustard seeds - 1 TSP
  4. Cumin seeds - 1 TSP
  5. Hing powder - 1/4 Tsp
  6. Curry leaves - 5-6 leaves
  7. Turmeric powder - 1 Tsp
  8. Red Chilli powder - 1 Tsp
  9. Kala Masala / Garam Masala - 1 TBSP
  10. Salt to taste
  11. Water - 1/3 cup

Method

  1. Heat a Pan on medium flame. Once hot add oil.Add mustard seeds, once they splutter , add cumin seeds and hing powder. Add curry leaves.
  2. Add the cut butternut squash and mix well.
  3. Add turmeric powder , chilli powder, kala masala , salt to taste.Mix well and saute for another 2-3 minutes.
  4. Add water and mix well. Cover and cook for 5-7 minutes.
  5. Garnish with finely cut cilantro and serve hot with a roti or paratha.
