- Bhindi / Okra - Small -15-20
- Vegetable Oil - 2 TBSP
- Cumin seeds - 1 tsp
- Cinnamon - 1/2 inch
- Black pepper cons - 5-6
- Green cardamom - 2-3
- Hing Powder - 1/2 Tsp
- Onion, chopped - 1
- Red chilli powder - 1 Tsp
- Coriander powder - 2 Tsp
- Turmeric powder - 1 Tsp
- Tomatoes, chopped - 2
- Ginger - 1/2 inch
- Garlic - 3-4 pods
- Salt to taste
- Water - 1/4 cup
- Black cardamom - 2-3
- Onion, diced 1
- Small whole Lady finger - 15-20
- 1 tsp Ginger-Garlic paste
- Salt to taste
- Coriander leaves, chopped - for Garnishing
How To Make Bhindi Do Pyaza. Step By Step Instructions
In a kadai, heat oil and add cinnamon, cumin seeds, black peppercorns, and green cardamom. Let them crackle. Then, saut onions until they turn light golden brown. Incorporate ginger-garlic and saut for an additional minute. Next, add chopped tomatoes and saut until they turn mushy. Introduce red chili powder, coriander powder, and turmeric powder. Saut for another minute. Pour in some water, bring it to a boil, and turn off the flame. Allow the mixture to cool down. Once cooled, grind the mixture into a fine paste and keep it aside for later use. In the same kadai, heat oil and add black cardamom, onions, and ladyfinger (okra). Saut for 4-5 minutes or until the ladyfinger is cooked. Add salt and the prepared gravy. Saut and cook for about a minute. Finish the dish with freshly chopped coriander leaves.
