Ingredients -
- All purpose flour / Maida - 1 cup
- Baking powder - 1 Tsp
- Baking Soda - 1/2 Tsp
- Cinnamon powder - 1 + 1/2 Tsp
- Sugar - 1 cup
- Vegetable oil - 1/4 cup
- Almond or non dairy milk - 1/2 cup
- Apple sauce - 1/4 cup
- Vanilla essence - 1 TSP
- Apple - cut into pieces - 1 cup
- Corn flour - 5 TBSP
- Brown Sugar - 3 TBSP
- Vegan butter - 1 TBSP
Method
- Mix the dry ingredients, all purpose flour , baking powder , baking soda , cinnamon powder . Sieve them through a sieve to make sure there are no lumps.
- Mix the wet ingredients: apple sauce , sugar , vegetable oil , almond or non dairy milk . blend them together using a hand blender.
- Add dry ingredients to the wet ingredients and again blend with hand blender for just a minute or so , just to make sure there are no lumps. Do not over blend or else the cake gets less softer.
- Add apple pieces and vanilla essence and mix well.
- Crumble : Add corn flour , brown sugar , vegan butter and cinnamon powder and mix well.
- Take a muffin pan and line it up with paper cups. Scoop your muffin batter in the cups. Add TBSP crumble on the top.
- Preheat the oven at 350 deg Fahrenheit or 180 deg Celsius. Bake muffins for 20 - 25 minutes in the preheated oven or until a skewer inserted into the muffin comes clean.
