Ingredients For Vegan Aloo Matar Sandwich Recipe

For Stuffing

  1. Potatot / Aloo – boiled and cubed – 1 cup
  2. Green peas / Matar – boiled – ½ cup
  3. Onion – finely chopped – ½ – optional
  4. Vegetable oil – 1 Tsp
  5. Jeera / cumin seeds – ½ Tsp
  6. Hing powder – 1/4 Tsp
  7. Turmeric powder – 1 Tsp
  8. Red Chilli powder – 1 Tsp – or optionally you can also used finely chopped green chillies.
  9. Corriander-cumin powder – 1 Tsp
  10. Salt to taste.
  11. Cilantro – finely chopped.

For Sandwich

  1. Sandwich Bread slice – 4 – for gluten free version use the gluten free bread available in market.
  2. Vegan Butter – 1 TBSP

Method For Vegan Aloo Matar Sandwich

Stuffing

  1. In a pan heat oil on medium flame.Once hot add oil.
  2. Once the oil is hot add cumin seeds and hing powder.
  3. If you want to add green chillies or onions now is the time. Saute onions till they turn translucent.
  4. Add the turmeric powder , coriander seeds-cumin seeds powder , red chilli powder and salt. Mix well.
  5. Add boiled potatoes and boiled green peas. MIx well. Cover and cook for 2-3 minutes on medium flame.
  6. Add cilantro and mix well. Optionally you can also add lemon juice if you like.

Sandwich

  1. Take 2 slices of bread. SPread and apply vegan butter to both slices.
  2. Place on slice with butter side up on a plate or cutting board.
  3. Take a spoonful of stuffing and spread on the bread slice. While taking the stuffing smash it a little with the spoon to give it a smooth texture.
  4. Keep the other slice of bread with butter side facing inside on top of the stuffiung.
  5. Toast the sandwich in a grill or sandwich maker or simply in a pan.
  6. Serve hot with ketchup or chutney.
