Veg Kofta Recipe is free from :

  • Wheat
  • Peanuts
  • tree nuts
  • dairy
  • casein
  • soy
  • egg
  • sesame
  • fish
  • shellfish

Ingredients for the Veg Kofta Curry

  • 4-5 finely chopped Onions
  • 4-5 finely chopped Tomatoes
  • 2 TBSP Melon seeds
  • 1 Inch Ginger
  • 2-3 Garlic cloves
  • 2 Tsp Turmeric powder
  • 2-3 Tsp Red chilli powder
  • 1.5 TBSP Coriander powder
  • 2 Tsp Cumin seeds powder
  • 2 Bay leaves
  • 1-inch Cinnamon stick
  • 2 Black cardamom pods
  • 2 Green cardamom pods
  • 2-3 TBSP Vegetable oil
  • 1 Tsp Garam masala
  • 1 Tsp Kasuri Methi
  • Salt to taste

The Method to Craft the Flavorsome  Vegetable Kofta Curry

  • Heat a Kadai on medium heat and add oil.
  • Add bay leaves, cinnamon stick, black and green cardamom, sauté until fragrant.
  • Sauté onions till translucent, and add ginger-garlic paste.
  • Add dry masalas – turmeric, red chilli, coriander, cumin seeds powders, tomatoes, melon seeds, salt. Cover and cook for 30 mins, stirring occasionally.
  • Remove bay leaves, cool the masala, and grind into a smooth paste.
  • In a Kadai, add 1 Tsp oil, and sieve the masala. Add water, adjust salt, add garam masala, and kasuri methi.

Ingredients for the Delectable Veg Kofta

  • ½ cup grated or finely chopped Cabbage
  • ½ cup grated or finely chopped Carrot
  • 2-3 boiled and smashed Potatoes
  • Finely chopped Cilantro
  • ½ inch finely chopped Ginger
  • 2 TBSP Besan
  • ½ cup Bread crumbs (gluten-free if needed)
  • 1 Tsp Turmeric powder
  • 1 Tsp Red chilli powder
  • 1 Tsp Chat masala
  • Salt to taste

Crafting the Irresistible Veg Kofta

  • Mix cabbage, carrot, cilantro, potato, besan, and dry masalas in a bowl.
  • Add bread crumbs, form lemon-sized balls, and adjust besan if needed.
  • Deep fry till golden brown.

Assembling the Dish

In a bowl, pour gravy, place koftas, and garnish with cilantro. Serve hot with roti or paratha, relishing the delightful flavours of this vegan twist to the classic Malai Kofta.
