Ingredients Vegan Vanilla Ice Cream
- Coconut cream -1 Cup
- Coconut Milk – 1 cup + ¼ cup
- Coconut condensed milk – 1/4 cup
- Coconut Milk powder- 1/4 cup
- Powder sugar – 2 TBSP
- Corn flour – 1 TBSP
- Vanilla beans – 1 or Vanilla essence – 1 Tsp
Method For Vegan Vanilla Ice Cream
- In a pot add coconut milk , coconut milk powder, sugar , corn flour. Mix well and make sure there are no lumps. Cook the mixture on low flame till it gets to a boil. Cool it down completely at room temperature.
- In a mixing bowl add coconut cream. Beat it till you get soft peaks. Add condensed milk and mix well.
- Add the cooked mixture to coconut cream and mix well. Pour the mixture in a glass container . Cover with an airtight lid and refrigerate for 2 hours.
- After 2 hours add the mixture to a blender , add vanilla beans or essence and pulse it for 2-3 times.
- Add back to the glass container and cover with an airtight lid. Refrigerate for 7-8 hours.
